An easy to make pastry recipe with artichoke and mozzarella cheese, in a tender puff pastry shell. The complex taste of the artichoke and cheese, combined with the pastry shell, makes for a great finger food appetizer at even the most sophisticated of parties. This recipe is vegetarian. This recipe serves 4.
INGREDIENTS:
1 cup cooked artichoke hearts, cut into chunks
4 oz. Mozzarella cheese
1 tsp. salt
1 tsp. black pepper
7 oz. puff pastry, thawed and thinly rolled into 16 pastry boat pans
1 tsp. paprika
METHOD:
Preheat oven to 400 F (200 C). Season artichoke hearts with salt and black pepper.
Put hearts in pastry boats and sprinkle with Mozzarella cheese. Sprinkle cheese with the paprika. Cook in oven for 20 minutes until golden and puffed. Serve hot or cold with a light salad and cold cuts.
